Simple & Elegant French Onion Soup
Layered with a slice of low carb bread and 3 different cheeses makes this soup a rich and comforting meal.

½ c unsalted butter
2 T olive oil
6 c sliced onions (we use Vidalia)
44 oz. beef broth
1 t dried thyme
Salt & pepper to taste
4 slices low carb bread such as Sara Lee 45 Calories & Delightful
4 slices Provolone cheese
2 slices Swiss cheese, quartered
¼ c grated Parmesan
- Melt butter with olive oil in large stock pot or Dutch oven on medium heat. Add onions & continually stir until translucent. Do not brown.
- Add beef broth and thyme, season with salt and pepper if desired. Simmer 30 minutes.
- Heat oven broiler
- Ladle soup in oven safe soup crocks and place one slice of bread on top of each. Layer with a slice of provolone, then Swiss, then 1 T of parmesan.
- Place bowls on cookie sheet and broil until cheese bubbles and browns slightly.
