Simple & Elegant French Onion Soup

 Layered with a slice of low carb bread and 3 different cheeses makes this soup a rich and comforting meal.

Serves 4



½ c unsalted butter

2 T olive oil

6 c sliced onions (we use Vidalia)

44 oz. beef broth

1 t dried thyme

Salt & pepper to taste

4 slices low carb bread such as Sara Lee 45 Calories & Delightful

4 slices Provolone cheese

2 slices Swiss cheese, quartered

¼ c grated Parmesan



  1. Melt butter with olive oil in large stock pot or Dutch oven on medium heat. Add onions & continually stir until translucent.  Do not brown.
  2. Add beef broth and thyme, season with salt and pepper if desired. Simmer 30 minutes.
  3. Heat oven broiler
  4. Ladle soup in oven safe soup crocks and place one slice of bread on top of each. Layer with a slice of provolone, then Swiss, then 1 T of parmesan.
  5. Place bowls on cookie sheet and broil until cheese bubbles and browns slightly.
