Chicken Veggie Soup

Serves: 4




1 chicken breast, chopped

3 carrots, sliced

3 celery stalks, sliced

6 cups chicken stock

½ head small green cabbage, sliced

1 tsp garlic powder

1 tsp Italian seasoning

1 tsp butter



Finely slice ½ head of cabbage and set aside. Slice carrots and celery and set aside. Cut chicken breast into small pieces.



Place butter, chicken, garlic powder and Italian seasoning in stock pot and cook chicken on low-medium heat. Once chicken is cooked add stock, carrots and celery. Bring to boil and then lower to a simmer, cook for 30 mins. Add cabbage, bring back to a boil and then lower to a simmer. Cook another 15 mins or until the cabbage is tender.
